Meat khichuri


Ingredients:

2 cups of polao rice

1 cup of lentils

1 kg of meat

1/2 cup of chopped onion

2 teaspoons of garlic paste

Ginger paste 1 teaspoon

2 pieces of cinnamon

5-6 cardamoms

2 bay leaves

5-6 cloves

2 teaspoons of chilli powder

1 teaspoon of turmeric powder

Coriander + cumin powder 1 teaspoon

7-8 whole green chillies

3 tbsp oil

8 cups of water

Salt to taste


Method:

Wash the rice + pulses and add water. When the pot is heated with oil over medium heat, add bay leaves, cinnamon, cloves and cardamom.


When the spice leaves the aroma, fry it with chopped onion. When the onion becomes soft, fry it with ginger + garlic paste for some time.


Add coriander and cumin powder and season with water and salt. Add spice oil and add meat.


Mix the meat well with the spices. Cover with a lid and cook the meat and shake it after some time so that the meat does not get caught. The meat should be washed in the water that comes out of the meat. There is no need to add extra water. If the meat is well drained, that is, when the water coming out of the meat is completely dry, add rice + pulses and fry it for some time. Add 6 cups of water.


When the water dries and the rice is covered with butter, reduce the heat of the oven completely. Add a little green chillies, cover the pot and simmer for another 15 minutes.


Tips:


1. Rice pulses must be washed and drained well.


2. In the cup in which you measure rice + pulses, water should also be measured in the same cup.


3. Do not stir excessively after adding water to the khichuri. Just move the top rice down, the bottom rice up once.


4. The stove flame plays an important role in keeping the khichuri clean. So keep in mind when and how to keep the flame in the recipe.
