This biryani is cooked in different Mazar Sharifs of Chittagong and Sylhet.


Akhni is usually the name of a special method of making water with spices. The polao will be cooked with that water and the cooked meat will be mixed with it. This is the specialty of akhni. Unlike other biryani, it is cooked not with basmati or polao rice, but with ordinary rice.


Ingredients:


For meat-

1 kg of beef, half a cup of oil, 1 cup of chopped onion, 1 tablespoon of ginger paste, 1 teaspoon of garlic paste, 1 teaspoon of cumin paste, 1 teaspoon of coriander paste, salt to taste, 2 teaspoons of chilli powder , 1 teaspoon of turmeric powder, half a teaspoon of black pepper, half a teaspoon of nutmeg-jaggery, half a teaspoon of fenugreek and anise paste, 3-4 leaves of bay leaves, half a teaspoon of hot spice paste, 2 tablespoons of onion paste 1 tablespoon of almond paste.


For cooking rice-

Boiled rice 1 kg, amount of salt, half cup of oil, 2 tablespoons of ghee, 8-10 tablespoons of green chillies, 1 tablespoon of raisins, 8 cups of akhni water.


To make Akhni water-

Water - 14 cups, Garlic - 3 tbsp, Ginger powder - 2 tbsp, Cardamom - 6 tbsp, Clove - 6 tbsp, Cinnamon - 4 tbsp Medium pieces, Bay leaves - 4 tbsp, Whole bell pepper - 10/12 tbsp , Half a cup of chopped onion.


Put 14 cups of water with all the ingredients in the oven. Boil the spices and pour the water into the cup and strain the water.


Method:


Put all the spices in the meat and leave it for half an hour. Fry the onion in oil and pour the meat. Cover with a lid. Water is needed to boil the meat. When the water is dry, take it down. Now all the spices of Polaway should be boiled in 8 cups of water. Pour rice in boiling water and when the water is dry, give meat. Shake well and cover with raisins and chillies on low heat.
