Recipe with Nihari / Paya Cooking Recipe with Eid Special Tips. Modern Cooking Recipes 2021


Cow or goat legs – 2 kg

Onion crumbs – 1 cup

Crushed garlic – half a cup

Ginger paste – 1 tablespoon

Almond paste – 2 tbsp

Bay leaves – 3

Cardamom – 6

Cloves – 8/10

Pepper – 8/10

Cinnamon – 2/3 piece

Chili powder – 1 tbsp

Turmeric powder – half a teaspoon

Coriander powder – one and a half teaspoon

Bread – 3 pieces

Like oil- quantity

Salt – to taste


For stocks / gardeners-

Oil / Ghee, Onion Crush, Garlic Crush, Whole Cumin


Method:


Take the legs in a big pot and mix it with all the spices and oil except the bread in it and put it in the oven. Cook. When it is well cooked, cut the hard part around the bread and blend the white part in the middle with the same amount of water. Mix the blended bread well with the broth.

In another pan, add oil / ghee for storage / bagar for the desired concentration of broth. Fry till golden with onion and garlic. Add whole cumin seeds. When the cumin seeds are boiled, pour all the ingredients including oil into the Nihari pot and mix it. Cover the pot and cook for another 2-3 minutes. Serve hot. © Tosun’s Orb


Tips-


1. In Nihari cooking, it is better not to move too much. As a result of excessive movement, the bone marrow comes out. Since it is cooked and covered for a long time on low heat, every part is perfectly cooked even if it is not stirred.

2. After giving Sambhar / Bagar, you must cover the Nihari pot for some time. The flavor of Sambhar will blend very well in Nihari.
